Persian style grilled beef kabob

Kebab Kubideh

Ground-beef never tasted so good!

Seasoned ground-beef placed on metal skewers. Grilled over a charcoal fire or broiled in the oven. Served with plain steamed rice sprinkled with dried sumac.

For best results use wider than usual metal skewers. Cook beef over charcoal fire. Heat coals until they are ash gray.

Koobideh or kubideh ~ Kabob means 'barbecue' and Koobideh means 'ground or beaten' in the Persian language or Farsi (Arabic pronunciation of Parsi).

  1. Ground-beef - 1 1/2 lbs
  2. Egg - 1 large slightly beaten
  3. Onion - 1 medium grated
  4. Salt - 1 teaspoon
  5. Pepper - 1/4 teaspoon
  6. Turmeric - 1 teaspoon
  7. Lemon juice - 1 tablespoon


  1. Thoroughly mix ingredients in a large bowl.
  2. Divide mixture into portions big enough to fit into the ball of your hand.
  3. Press each portion around evenly.
  4. Using two fingers in a scissor like fashion, lightly press on the meat to create indentations along the length of the skewer.
  5. Heat barbecue fire until charcoal turns ash white.
  6. Place skewered meat on the barbecue and flip sides frequently for about 3 minutes, then let each side cook for another 3 minutes before removing from grill.
  7. Remove skewers from grill, place in between warm flat bread, press down and remove the skewers.


  1. Kabob is grilled over hot coals or a gas barbecue - Metal skewers are long and flat, at least 1 1/4 in width. Kabobs can be oven baked as well.
  2. Traditionally kabobs are served along side steamed rice and barbecued tomatoes sprinkled with sumak, a small pat of butter and finally an egg yolk. Kabobs can also be served wrapped in flat bread or plain rice.
